Description

Delicious and crispy Air Fryer Lemon Chicken Bites, inspired by Asian flavors and perfect for a quick and flavorful meal.


Ingredients

Chicken Bites:

  • 2 lbs. Chicken Thighs skin-on
  • 1.5 tsp coarse sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp white pepper
  • 1/4 cup lemon juice (about 1 to 1 1/2 whole lemons)
  • 2 tbsp olive oil
  • 23 sprays avocado oil for the air fryer basket

Serving:

  • 2 tbsp chopped chives
  • Sprinkle Furikake (optional)
  • Extra lemon wedges on the side (about a quarter to half of one whole lemon)

Instructions

  1. To prep: Debone the chicken thighs and dice them slightly larger than bite sizes. Transfer to a container and add salt, garlic powder, onion powder, white pepper, lemon juice, and olive oil. Marinate overnight in the fridge.
  2. To air fry: Lightly spray air fryer basket with avocado oil. Place chicken skin-side up in the basket, ensuring they do not overlap. Air fry at 380F (193C) for 18-20 minutes until golden and cooked through.
  3. To serve: Transfer chicken to a serving plate, sprinkle with chives and furikake, and serve with lemon wedges.

Notes

  • Can I use skinless/boneless chicken thighs? You can, but the dish won’t be as flavorful without the crispy skin.
  • Can I use black pepper instead of white pepper? Yes, but white pepper enhances the Asian-inspired flavors of the dish.
  • Marinate the chicken overnight for extra flavor. Perfect for make-ahead preparation.
  • If using the oven, follow the provided instructions for baking.
