Description

Delightful homemade Apple Turnovers featuring a crisp, flaky puff pastry filled with sweet, cinnamon-spiced Granny Smith apples. Perfect for breakfast, dessert, or a cozy snack, these turnovers are easy to prepare and baked to golden perfection.

Ingredients

Scale

Filling

  • 4 Granny Smith apples, diced (about 2 cups)
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice
  • Pinch of salt

Dough & Topping

  • 2 sheets frozen puff pastry, thawed
  • Flour for dusting
  • 1 egg, whisked with 1 tbsp water (egg wash)
  • Sanding or turbinado sugar (optional)

Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 400°F (200°C). Line two sheet trays with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare the apple filling: In a large mixing bowl, combine the diced Granny Smith apples, brown sugar, cinnamon, lemon juice, and a pinch of salt. Stir well until all the apples are evenly coated. Let the mixture rest for 10 minutes to allow the flavors to meld and the apples to release some juice.
  3. Roll out the puff pastry: On a lightly floured surface, place the thawed puff pastry sheets. Gently roll each sheet out to form roughly a 12×12 inch square. This will give you thinner pastry layers for a flaky texture.
  4. Cut and fill the pastry: Cut each pastry sheet into 4 equal squares. Spoon a generous amount of the apple filling into the center of each square, leaving about a ¼ inch border around the edges to seal the turnovers properly.
  5. Form the turnovers: Fold each square diagonally to form a triangle over the filling. Use a fork to crimp the edges securely to prevent the filling from leaking out during baking.
  6. Apply egg wash and add sugar: Brush the tops of the turnovers with the egg wash to give them a shiny, golden finish. Sprinkle with sanding or turbinado sugar for added crunch and sweetness if desired.
  7. Bake the turnovers: Place the prepared turnovers on the lined trays and bake in the preheated oven for 18-20 minutes, or until they are puffed up and golden brown.
  8. Cool and serve: Remove the turnovers from the oven and transfer them to a wire rack to cool slightly. Serve warm or at room temperature for the best taste experience.

Notes

  • Using tart Granny Smith apples balances the sweetness and adds a nice tang.
  • Thaw puff pastry thoroughly before rolling for easier handling.
  • Brush egg wash evenly for a beautiful golden finish.
  • You can prepare the turnovers ahead of time and freeze them before baking; bake directly from frozen adding an extra few minutes to baking time.
  • For a dairy-free version, substitute the egg wash with a plant-based milk or syrup glaze.
  • The optional sanding sugar adds a lovely texture and a sparkle to the turnovers.
