Description

A comforting and creamy Bacon Cheddar Gnocchi Soup that is loaded with flavors. Perfect for a cozy night in or to impress guests with a hearty meal.


Ingredients

Bacon:

  • 810 slices Bacon

Soup:

  • 1 Tablespoon Butter or Olive Oil
  • 1 large Onion (diced)
  • 2 large Carrots (peeled and sliced into small pieces)
  • 4 cups Chicken Broth
  • 1 to 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
  • 1/4 teaspoon Dried Thyme
  • 1/2 to 1 teaspoon Red Chili Flakes
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese

Instructions

  1. Cook bacon: Cook bacon by preferred method. Once cooled, cut into small pieces.
  2. Sauté vegetables: In a large pot over medium heat, sauté onions and carrots in butter or olive oil until tender, about 10-15 minutes.
  3. Add broth and simmer: Pour in chicken broth and let simmer.
  4. Combine ingredients: Add heavy cream, spices, and gnocchi. Let simmer until slightly reduced. Gradually stir in cheese until melted.
  5. Finalize soup: Stir in bacon pieces. Serve with additional cheese, green onions, and bacon.

Notes

  • To cook bacon in the oven, preheat to 400 degrees F, lay bacon on a foil-lined baking sheet, and bake for 20-27 minutes.
