  • 1 lb. ground beef
  • 1 1/2 cups cooked white or brown rice
  • 1 (14.5-oz.) can diced tomatoes
  • 1 1/2 tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 6 bell peppers, tops and cores removed
  • 1 cup shredded Monterey jack
  • Chopped fresh parsley, for serving

Instructions

  1. Step 1: In a large skillet, cook onion in olive oil until softened. Add garlic, tomato paste, and ground beef; cook until beef is no longer pink.
  2. Step 2: Stir in rice, diced tomatoes, oregano, salt, and pepper. Simmer until slightly reduced.
