- 1 medium yellow onion, chopped
- 3 cloves garlic, finely chopped
- 2 Tbsp. tomato paste
- 1 lb. ground beef
- 1 1/2 cups cooked white or brown rice
- 1 (14.5-oz.) can diced tomatoes
- 1 1/2 tsp. dried oregano
- Kosher salt
- Freshly ground black pepper
- 6 bell peppers, tops and cores removed
- 1 cup shredded Monterey jack
- Chopped fresh parsley, for serving
Instructions
- Step 1: In a large skillet, cook onion in olive oil until softened. Add garlic, tomato paste, and ground beef; cook until beef is no longer pink.
- Step 2: Stir in rice, diced tomatoes, oregano, salt, and pepper. Simmer until slightly reduced.
- Step 3: Arrange peppers in a baking dish, fill with beef mixture, and bake covered.
- Step 4: Bake until peppers are tender, then sprinkle with cheese and bake until bubbly.
- Step 5: Top with parsley before serving.
