Ingredients

Muffins:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 15 oz. can pumpkin purée
  • 1/2 cup cooking oil
  • 1 tsp vanilla extract

Cream Cheese Filling (optional):

  • 4 oz. cream cheese, room temperature
  • 2 Tbsp granulated sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350ºF.
  2. Mix dry ingredients: In a medium bowl, stir together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. Mix wet ingredients: In a large bowl, whisk together eggs, granulated sugar, brown sugar, pumpkin purée, oil, and vanilla extract.
  4. Combine: Pour dry ingredients into wet ingredients and stir just until combined.
  5. Prepare cream cheese filling: In a small bowl, mix cream cheese and sugar.
  6. Fill muffin tin: Grease or line muffin tin, fill each well 1/3 full, add cream cheese dollop, then cover with remaining batter.
  7. Bake: Bake for about 24 minutes until puffed and cracked on top.
  8. Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
