Muffins:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 15oz. can pumpkin purée
- 1/2 cup cooking oil
- 1 tsp vanilla extract
Cream Cheese Filling (optional):
- 4 oz. cream cheese, room temperature
- 2 Tbsp granulated sugar
Instructions
- Preheat the oven: Preheat the oven to 350ºF.
- Mix dry ingredients: In a medium bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Prepare wet ingredients: In a large bowl, whisk together eggs, granulated sugar, brown sugar, pumpkin purée, oil, and vanilla extract.
- Combine wet and dry: Mix the dry ingredients into the wet ingredients until just combined.
- Make cream cheese filling: Combine cream cheese and sugar in a small bowl.
- Fill muffin tin: Grease or line muffin tin. Fill each well 1/3 full, add cream cheese filling, then top with remaining batter.
- Bake: Bake for about 24 minutes until puffed and cracked on top.
- Cool and serve: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
