Batter:

  • 2 cups buttermilk
  • 2 large eggs

Coating:

  • 2 cups all-purpose flour
  • 1 tablespoon cajun seasoning
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper

Additional:

  • Olive oil spray

Instructions

  1. Salt and Pepper Chicken: Season chicken thighs and legs with salt and pepper.
  2. Prepare Batter: In a bowl, whisk together buttermilk and eggs.
  3. Coating Mix: In another bowl, combine flour, cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dredge Chicken: Coat chicken in flour, then buttermilk, and again in flour.
