Description

Fluffy Cottage Cheese Cloud Bread is a light and airy low-carb alternative to traditional bread, perfect for those following ketogenic or gluten-free diets. Made primarily from eggs and cottage cheese, this bread offers a high-protein, low-calorie option that pairs well with both sweet and savory toppings.

Ingredients

Units Scale
  • 3 large eggs, separated, at room temperature
  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt

Optional Ingredients

  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon honey or preferred sweetener

Instructions

  1. Preheat the Oven

    1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Prepare the Egg Whites

    1. In a clean, dry bowl, add the cream of tartar to the egg whites. Beat with an electric mixer until stiff peaks form.
  3. Prepare the Egg Yolk Mixture

    1. In a separate bowl, combine the egg yolks, blended cottage cheese, salt, and any optional ingredients (cornstarch for added structure or honey for a touch of sweetness). Mix until smooth.
  4. Combine Mixtures

    1. Gently fold the whipped egg whites into the egg yolk mixture in thirds, maintaining as much air as possible to keep the batter light and airy.
  5. Form the Bread Rounds

    1. Scoop the mixture onto the prepared baking sheet, forming 6 to 8 rounds. Use the back of a spoon to shape them evenly.
  6. Bake

    1. Place the baking sheet in the preheated oven and bake for 25 to 30 minutes, or until the cloud breads are golden brown.
  7. Cool

    1. Remove from the oven and let the cloud breads cool completely on the baking sheet before serving.

Notes

  • Room Temperature Eggs: Using room temperature eggs can help achieve better volume when whipping the egg whites.

  • Immediate Baking: It’s essential to bake the cloud bread immediately after mixing to maintain its structure and prevent deflation.

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. To enjoy, reheat briefly in a toaster or oven to restore fluffiness.
