Description

These Garlic Parmesan Roasted Carrots are crispy on the outside, tender on the inside, and packed with savory garlic and Parmesan flavors. A simple yet delicious side dish perfect for any meal!


Ingredients

  • 2 pounds carrots, washed and halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced (or 1 tablespoon minced garlic)
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons Panko bread crumbs (or regular breadcrumbs)
  • 1 pinch salt, to taste
  • 1 pinch pepper, to taste
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. Preheat Oven:
    1. Preheat oven to 400°F (200°C).
    2. Lightly grease or spray a baking sheet with cooking oil spray.
  2. Prepare Carrots:
    1. Arrange halved carrots on the baking sheet.
    2. Add olive oil, minced garlic, Parmesan cheese, breadcrumbs, salt, and pepper.
  3. Coat and Bake:
    1. Toss all ingredients together until the carrots are evenly coated.
