  • 1 pint shiitake mushrooms, chopped

  • 2 cups broccoli slaw
  • 1/2 pound ground turkey
  • 1 teaspoon fish sauce
  • 2 tablespoons tamari
  • 1 tablespoon sesame oil

Wrapping:

  • 1214 egg roll wrappers

Instructions

  1. Make the filling: Heat olive oil in a skillet, add ginger and garlic paste, mushrooms, scallions, broccoli slaw, ground turkey, fish sauce, and sesame oil. Cook until turkey is no longer pink.
  2. Assemble the egg rolls: Place filling on egg roll wrapper, moisten edges, roll tightly, and seal.
  3. Air Fry: Preheat air fryer to 400°F. Spray basket, place egg rolls in a single layer, spray with oil, cook for 6 minutes, flip, spray again, and cook for 4-5 more minutes.
