Filling:
- 1 tablespoon olive oil
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 pint shiitake mushrooms, chopped
- 1/4 cup chopped scallions
- 2 cups broccoli slaw
- 1/2 pound ground turkey
- 1 teaspoon fish sauce
- 2 tablespoons tamari
- 1 tablespoon sesame oil
Wrapping:
- 12–14 egg roll wrappers
Instructions
- Make the filling: Heat olive oil in a skillet, add ginger and garlic paste, mushrooms, scallions, broccoli slaw, ground turkey, fish sauce, and sesame oil. Cook until turkey is no longer pink.
- Assemble the egg rolls: Place filling on egg roll wrapper, moisten edges, roll tightly, and seal.
- Air Fry: Preheat air fryer to 400°F. Spray basket, place egg rolls in a single layer, spray with oil, cook for 6 minutes, flip, spray again, and cook for 4-5 more minutes.
- Serve: Enjoy with your favorite dipping sauce.
