Description

This Instant Pot Marry Me Chicken Pasta is a creamy and flavorful dish that’s perfect for a quick and delicious dinner. Tender chicken, sun-dried tomatoes, spinach, and pasta are cooked in a creamy sauce with parmesan cheese, creating a comforting meal the whole family will love.

Ingredients:

  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 4 cups reduced-sodium chicken broth, divided
  • 16 ounces uncooked penne pasta
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 1 cup sun-dried tomatoes, drained and roughly chopped
  • 1 cup fresh spinach
  • Fresh basil for garnish

Instructions

  1. Press sauté. When the Instant Pot reads “hot”, add the olive oil.
  2. Stir in the chicken, and cook until browned, about 2-3 minutes.
  3. Add the garlic, and cook for 30 seconds, stirring the entire time.
  4. Pour in ½ cup chicken broth, and scrape up any browned bits from the bottom of the pot.
  5. Add the remaining chicken broth and then the pasta.
  6. Sprinkle the Italian seasoning, paprika, and pepper over the top. Do not stir.
  7. Close and lock the lid. Press manual high pressure, and adjust the cooking time to 4 minutes. Be sure that the pressure release valve is set to sealing.
  8. When the cooking time has finished, carefully turn the pressure release valve to venting to release the pressure.
  9. Unlock the lid, and give everything a good stir.
  10. Stir in the parmesan cheese until melted.
  11. Add the cream and stir in.
  12. Stir in the spinach and chopped sundried tomatoes until combined.
  13. Serve sprinkled with a bit of basil.

Notes

  • Chicken broth: I like to use reduced-sodium chicken broth to better control the level of salt. You can use regular broth or no salt broth if you prefer.
  • Pasta: Feel free to use a similar shape of pasta.
  • Cream: Using half-and-half or whole milk will give you thinner sauce.
