Chia Pudding:
- 1/2 cup Chia Seeds
- 1 cup Light Coconut Milk
- 1 cup Milk Of Choice
- 1/2 cup Mango Juice
- 2 tbsp Maple Syrup Or Honey
Fruit Salad:
- 1 cup Strawberries, Sliced
- 1/2 cup Blackberries
- 1/2 cup Blueberries
- 1/2 cup Raspberries
- 1 cup Mango, Diced
Instructions
- Make the Chia Mixture: In a large bowl, combine chia seeds, coconut milk, milk of choice, and mango juice. Mix in maple syrup or honey. Allow to rest briefly, then stir again.
- Refrigerate: Cover the bowl with aluminum foil or plastic wrap and chill in the fridge to thicken.
- Prep the Fruit: Wash and prepare all fruits by slicing the strawberries and dicing the mango.
- Assemble: Once the chia pudding has thickened, stir and spoon into bowls or jars. Top with mixed fruits.
