Chicken and Rice:

  • 1.25 lbs. boneless, skinless chicken thighs (4-5 thighs)
  • 2 Tbsp cooking oil, divided
  • 1 yellow onion, diced
  • 1 cup long-grain white rice (uncooked)
  • 1.75 cups vegetable broth
  • 1 Tbsp chopped parsley (optional garnish)

Instructions

  1. Prepare Seasoning Mix: Combine paprika, oregano, thyme, garlic powder, onion powder, salt, and pepper in a bowl. Season chicken thighs with the mix.
  2. Brown Chicken: Cook seasoned chicken in oil until browned. Remove and set aside.
  3. Sauté Onion and Rice: Sauté onion, then add rice and cook briefly.
  4. Add Broth: Pour in vegetable broth and deglaze the skillet.
  5. Cook Chicken and Rice: Return chicken to skillet, cover, and simmer for 20 minutes.
  6. Rest and Serve: Let it rest off the heat for 5 minutes, then fluff rice and garnish with parsley before serving.
