  • 56 cups (800 g) fresh or frozen peaches, sliced or diced

Sugar:

  • 1 cup (200 g) sugar

Lemon or Lime Juice:

  • 13 teaspoons (515 ml) lemon or lime juice

Instructions

  1. Prepare the Sugar: If using regular granulated sugar, process in a food processor until a finer texture is achieved.
  2. Combine Ingredients: Add peaches and lemon juice, then pulse 5 – 10 times to combine.
  3. Blend: Process the mixture until smooth, scraping the sides as needed.
  4. Freeze: Transfer the mixture to a container and freeze for 4 hours (frozen peaches) or 6 – 8 hours (fresh peaches).
  5. Serve: Allow sorbet to sit at room temperature for 5 minutes before scooping.

Notes

  • This sorbet can be stored in the freezer for up to 1 month.
  • For a fun twist, serve sorbet with prosecco for a peach bellini.
  • If making large batches, adjust sugar accordingly and process in multiple batches.
