- 1 17-ounce tube polenta, cut into 8 (1/2-inch) slices
For the Tomato Sauce and Onion Topping
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 8 teaspoons homemade tomato sauce
- 2 cups vertically sliced onion
- 1 tablespoon balsamic vinegar
- 2 ounces feta cheese, crumbled (about 1/4 cup)
- 1 tablespoon chopped fresh chives
Instructions
- Prepare the Polenta: Warm a skillet over medium heat and lightly coat each polenta slice with cooking spray to prevent sticking.
- Grill the Polenta: Place the polenta slices in the skillet and grill for about 5 minutes on each side until they are lightly browned and have a crispy exterior.
- Sauté Garlic: In a separate large skillet over medium-high heat, add the olive oil and minced garlic. Sauté for about 15 seconds until fragrant to infuse the oil with garlic flavor.
- Cook the Onions: Add the vertically sliced onions to the skillet and sauté until they begin to soften and turn tender, about 5-7 minutes.
- Add Balsamic Vinegar: Reduce the heat to low, then stir in the balsamic vinegar. Continue cooking the onions and vinegar mixture for about 3 minutes, stirring frequently until caramelized.
- Assemble the Dish: Evenly layer about one teaspoon of homemade tomato sauce on each grilled polenta slice, followed by a spoonful of the balsamic onion mixture and then a sprinkling of crumbled feta cheese on top.
- Garnish and Serve: Finish by sprinkling chopped fresh chives over the assembled polenta slices. Serve warm and enjoy!
