For the Tomato Sauce and Onion Topping

  • 8 teaspoons homemade tomato sauce
  • 2 cups vertically sliced onion
  • 1 tablespoon balsamic vinegar
  • 2 ounces feta cheese, crumbled (about 1/4 cup)
  • 1 tablespoon chopped fresh chives

Instructions

  1. Prepare the Polenta: Warm a skillet over medium heat and lightly coat each polenta slice with cooking spray to prevent sticking.
  2. Grill the Polenta: Place the polenta slices in the skillet and grill for about 5 minutes on each side until they are lightly browned and have a crispy exterior.
  3. Sauté Garlic: In a separate large skillet over medium-high heat, add the olive oil and minced garlic. Sauté for about 15 seconds until fragrant to infuse the oil with garlic flavor.
  4. Cook the Onions: Add the vertically sliced onions to the skillet and sauté until they begin to soften and turn tender, about 5-7 minutes.
  5. Add Balsamic Vinegar: Reduce the heat to low, then stir in the balsamic vinegar. Continue cooking the onions and vinegar mixture for about 3 minutes, stirring frequently until caramelized.
  6. Assemble the Dish: Evenly layer about one teaspoon of homemade tomato sauce on each grilled polenta slice, followed by a spoonful of the balsamic onion mixture and then a sprinkling of crumbled feta cheese on top.
