Dry Ingredients:

- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs, room temperature
- 1/4 cup vegetable oil or melted butter
- 1 cup chopped pecans, optional
Instructions
- Preheat the oven: Preheat the oven to 350°F and prepare a loaf pan.
- Prepare dry ingredients: In a large bowl, whisk together flour, baking powder, pumpkin spice, baking soda, and salt.
- Mix wet ingredients: In a separate bowl, combine pumpkin puree, sugar, milk, eggs, and oil.
- Combine wet and dry: Add the wet ingredients to the dry mixture and stir until just moistened. Fold in nuts if desired.
- Bake: Pour the batter into the prepared pan and bake for 55-65 minutes until a toothpick comes out clean.
