Main
- 1/3 cup unsalted butter, melted
- 3/4 cup whole milk
- 2 teaspoons vanilla extract
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 2 1/4 teaspoons baking powder
- 3/4 teaspoon salt
- 2 teaspoons cinnamon
- 1 1/2 cups brown sugar, packed
- 1 1/2 cups hot water
Topping
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Pour and spread the melted butter evenly into a 9×13-inch baking pan, coating the bottom well.
- Mix the Batter: In a large bowl, whisk together the whole milk, vanilla extract, and sugar. Once combined, add the flour, baking powder, salt, and cinnamon. Whisk gently until just combined, taking care not to overmix the batter.
- Add Batter to Pan: Spoon the batter carefully over the melted butter in the baking pan, being careful not to mix or stir the layers together. This will help create a layered cobbler effect.
- Add Brown Sugar Layer: Evenly sprinkle the packed brown sugar over the top of the batter in the pan, making sure it’s distributed uniformly across the surface.
- Add Hot Water: Very gently pour the hot water over the entire pan. Do not stir; this step helps to create a gooey, saucy texture underneath the cobbler as it bakes.
- Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the cobbler is mostly set in the center.
- Add Topping: While the cobbler is still hot, mix together the sugar and cinnamon for the topping, then sprinkle this mixture evenly over the top of the baked cobbler.
- Serve: Let the cobbler cool slightly before serving. Serve warm for the best texture and flavor, optionally topped with vanilla ice cream if desired.
Notes
- Best served warm with a scoop of vanilla ice cream.
- Store any leftovers covered in the refrigerator for up to 4 days.
- This cobbler can be frozen for up to 2 months; thaw in the refrigerator before reheating.
- Make sure not to stir the layers together when assembling for the cobbler to bake with the perfect saucy bottom.
