Dressing
- 1/4 cup peanut butter
- 1/4 cup low-sodium soy sauce
- 2 Tbsp brown sugar or honey
- 2 Tbsp rice wine vinegar
- 1/2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- 1 tsp sriracha sauce
- 1–2 Tbsp water (optional)
Wraps
- 2 chicken breasts, cooked and chopped
- 3 cups coleslaw mix
- 1/2 cup grated carrot (optional)
- 1/4 cup chopped cilantro
- 1/4 cup roasted, salted peanuts
- 4–6 tortillas
Instructions
- Prepare Dressing: Whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce in a small bowl or liquid measuring cup. Optionally, thin the dressing with 1-2 tablespoons of water to achieve desired consistency.
- Combine Wrap Filling: In a large bowl, mix chopped cooked chicken, coleslaw mix, grated carrot, chopped cilantro, and roasted peanuts. Drizzle the prepared peanut dressing over the mixture, then toss everything together to combine evenly. Let the filling sit for a few minutes to allow the flavors to meld.
- Warm Tortillas: Heat the tortillas in the microwave for about 30 seconds until they become soft and pliable, making them easier to roll without cracking.
- Assemble Wraps: Divide the chicken and vegetable filling evenly among the warmed tortillas. Wrap them tightly, folding in the edges to secure the filling, and serve immediately for best texture and flavor.
Notes
- You can substitute tortillas with lettuce leaves for a low-carb option.
- Use cooked rotisserie chicken to save preparation time.
- Adjust the sriracha amount according to your spice preference.
- Add lime juice to the dressing for an extra tangy flavor if desired.
- Store leftover filling and dressing separately to keep tortillas from getting soggy if making ahead.
