Description

Angel Food Cake mix plus ingredients to prepare:

  • 1 Angel Food Cake mix
  • Ingredients to prepare as per package directions

Cream Cheese Filling:

  • 1 package cream cheese, cold (8oz or 250g)
  • 3/4 cup powdered sugar (83g)
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

Cake Roll:

  • 1 1/2 cups fresh strawberries (chopped)
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh raspberries

Instructions

  1. Prepare the Angel Food Cake: Preheat the oven to 350°F. Line a 10x15x1″ rimmed baking sheet with parchment paper. Prepare the cake mix according to package directions and pour into the prepared pan. Bake for about 20 minutes.
  2. Roll the Cake: While warm, roll the cake in a towel sprinkled with powdered sugar. Let cool completely.
  3. Make the Cream Cheese Filling: Beat cream cheese until smooth, then add powdered sugar, cream, and vanilla. Spread half of the filling on the unrolled cake, top with half of the berries, roll it back up, and spread remaining filling and berries on top. Serve.
