Instructions

  1. Prepare Zucchini: Grate the zucchini with skin on and transfer to a fine mesh strainer. Season with salt and let it stand for 15-30 minutes. Afterward, squeeze out as much liquid as possible using your hands or cheesecloth to avoid soggy fritters.
  2. Mix Ingredients: Transfer the drained zucchini to a large bowl. Add the corn, eggs, flour, grated cheddar, minced garlic, chopped green onions, salt, black pepper, sweet paprika, cumin, and vegeta seasoning. Mix thoroughly with a spatula until all ingredients are well combined.
  3. Heat Pan and Cook Fritters: Heat a little cooking oil in a non-stick pan over medium heat. Use about 1 heaping tablespoon of batter per fritter. Place the batter in the pan, spreading it gently with the back of a spoon to form round shapes and even edges. Cook for 4-5 minutes on each side until the fritters are golden brown and crispy.
  4. Keep Warm: Cook the fritters in batches. To keep cooked fritters warm and crispy, place them in a preheated oven at 400°F (204°C) while continuing to cook the remaining batter.
